My grandmother, Mary Jo Givnin, was an Irish woman and she loved to make and eat mashed potatoes. We always looked forward to her making potato cakes with the leftover mashed potatoes, and we had them for dinner at least once every week. She mixed the leftover mashed potatoes with sliced onion, egg, and flour until she could fashion a handful of the mixture into a cake and she then fried 4 at a time in butter until they were golden brown. She only flipped each potato cake once. We sometimes ate them with applesauce. We had a large family and potato cakes were a way to stretch a meal.
