Collard Greens the old fashion way:

If you have a garden,you always wait to pick the collard greens after the first frost,these collard greens will be alot sweeter.
Next: Wash them real good.Then break them up or what ever you want to do with them.I break them with my hands,stems and all.Next I put them in a big pot of water with 2 tablespoons of bacon grease,salt,pepper,side meat(ham bits or what ever meat you might have in the freezer) and some oinion.
Cook down nice and tender,let sit until amost cool,so the collards can mix with the seasons.
My grandmother always added a littler sugar to take the bite out of the seasons of the collards.
When things are cooled down,store in frig until next day,collards are always better eaten the next day.
This recipe was taught to me by mother and handed down to her from her mother.

This is the same way my mother taught us to cook collards, but now I add a little bell pepper to mine. I just love southern eating.
