Eggplant parm, Spanish Style

peel and cut Eggplant into slices no thicker then 1/8 inch.In seperate bowl,add three eggs,Adobo,onion powder,garlic powder,fine Oregano and sazon.beat mixture together.In frying pan add corn oil with two tablespoons of Extra virgen olive oil and heat it up.Take a plate and pour some Italian Seasoned bread crumbs.DIP EGGPLANTS SLICES INTO BATTER AND COAT WITH BREADCRUMBS.FRY UNTIL GOLDEN BROWN AND SET TO SIDE.In a baking pan,Layer the eggplants as follows-Eggplant,Spaghetti suace(use brand you like or make your own),mozarrela cheese.Bake in oven set at 375F until cheese melts and enjoy.
