Extra-Moist Banana Bread

3 cups flour
1 tsp. soda
1 tsp. cinnamon
1 tsp. ginger
1 tsp. nutmeg
2 cups sugar
1 tsp. salt
1 cup nuts, walnuts or pecans (optional)
3 lg. eggs
1 1/2 cups canola oil
1 (8 oz.) can crushed pineapple, undrained
1 1/2 tsp. vanilla extract
2 cups mashed bananas

Sift dry ingredients, add remaining ingredients. Stir with a wooden spoon only until well blended. Pour into two greased loaf pans and bake at 350 degrees F. for 60 - 80 min.
