Nita Shetley-Fleming My Mom >Leona Gaydon-Shetley's fudge....
She was the Pinto Bean Queen of the south. She out did herself on this one, but it is delicious.
1 can, 15 ounces, pinto beans rinsed and drained. Or you can use left over home cooked beans.
1 cup baking cocoa
3/4 cup butter melted
1 tablespoon vanilla extract
7-1/2 cups confectioners' sugar
1 cup chopped walnuts, optional

In a microwave-safe dish, mash pinto beans with fork until smooth; cover and microwave for 1-1/2 minutes or until heated through. Add cocoa, butter and vanilla.(mixture will be thick) Slowly stir in sugar; add nuts. press mixture into a 9 inch square pan coated with non stick cooking spray. cover and refrigerate until firm. Cut into squares. SURPRISE..IT IS GOOD...

Nita Shetley-Fleming My great Grandfather Archibald Gaydon lived in Lumpkin County GA all his life. His grandfather Uriah Gaydon left SC and moved to Lumpkin County to work in the Gold Mines. Archie's father Reuben Gaydon also worked in the mines. Archiblad , when he was young worked in the Gold mines too and when the mines closed he started farming. he had a big farm that was passed down from Uriah Gaydon to Rueben and then to Archie. Archie married Nancy Ann Corn, part Cherokee Indian. they had 2 sons, Spencer Lee and William Messer. Spencer left GA around 1915 , moved to Easley SC . During the depression years, traveled around quite a bit looking for work. His brother Messer joined him and both the boys families settled in North Carolina. Messer in Alamance County. Spencer died in Kings Mountain but his family ended up in Guilford County North Carolina.
My Grandfather Spencer and his wife Maude Lola Gillespie Gaydon had 8 children, 6 boys and 2 girls. At this writing in 2005...All the boys are deceased but the 2 girls are still living. My Mom is 96 and her sister Barbara is 94 years old. Submitted by Nita Shetley-Fleming.
