Name Origin
There appears to be two main groups of the Ebenstein family. These are basically broken down by religion - Jewish and Protestant.
In general, and please remember that this is not written in stone, the Ebensteins that originated in Germany are Protestant. The remainder of the Ebensteins from Europe, including Austria, Poland, Hungary, etc., are Jewish.
There are several theories about this breakdown. One is that the German branch of the name converted during the Spanish Inquisition, and subsequently relocated to the Duchy of Saxony sometime thereafter.
One fact that I have found runs true from my 50+ years of research is that there is no recent relationship between the families. If the Ebenstein family is Jewish, they are not related to the German branch for a minimum of 300 years. Research in Germany shows Evangelical (Lutheran) parish records as far back as 1720 of Ebenstein families in Saxony. .
Spellings & Pronunciations
Pronunciation of the name is varied. The Americanized version is usually Eben-sten, with the first two Es being short, and the last long. Alternately, it is pronounced Eben-stin, with the first two Es again being short, and the I being pronounced as a long vowel.
The STEIN portion of the name, in the Germanic tongues, is pronounced with the I. This is due to the common rule of the second vowel being long, as opposed to the English rule that the first vowel is long.
If the name were to be pronounced in its entirety as a German name, it would be something like: A-ben-schtine In this form, the first E is pronounced as a long A, the second as a short E, the ST as SCHT (shht), and the I is long.
The basic meaning of the name, in German, is EVEN or SMOOTH (eben) STONE (stein).

The actual country of origin for the name is unknown. It has been found in Germany, Austria, Hungary and Poland, and probably other European countries as well.

There have been several well known Ebensteins, writers, doctors,professors, etc. I am not familiar with them, as I am of the German line, and all of them are of the Jewish line. A simple Google search for the surname will provide numerous hits for them, as will a Library of Congress search.
