The Eppley surname was originally Appley. The first royal families of Europe took in peasants to slave in fields of trees to produce vibrant fruits all year round. These peasants were dubbed "Appleys" by the royal family, and as the need of the farmers grew smaller they were eventually realeased.
 
As the Appley families aged, the new generations often did not know their original surname's meaning.   For those Appley family members who did remember and who wanted to forget their families past, took "Eppley" as a substitute for the original "Appley." The surname Eppley originated from the apple farmers of Europe. As the name was probably originally writen, Appley, with an 'a' and not an 'e'.
Once the apple farmers escaped from the royals grasp of farming inprisonment, they gradually shifted the 'a' to an 'e', and hence produced the "Eppley" family we see today.
The original 'Appleys' were forced over to that name probably in England, France, Spain, and/or Germany. This happened not too long after the monarchys were formed, and the kings of the countries imprisoned peasants to farm the foods that were needed by the royals. That is also how the "fisher" surname was created.
