1 1/2 cup flour, 1 1/2 cup sugar, 2 eggs, 1/2 vegetable oil and 1/3 cup water, 1 cup canned pumpkin, 1 tsp. baking powder, 1 tsp. baking soda (mix with pumpkin), 1 tsp. salt, 1 tsp. allspice, 1 tsp. nummeg (optional), 1 tsp. cinnamon, 1/4 cup chopped walnuts, 1/2 cup raisins (optional)
Beat eggs. Add oil/water and sugar. Add dry ingredients and pumpkin with soda. Mix in nuts and raisins. Mix well and pour into two loaf pans. Bake at 350 degrees for one hour or until toothpick inserted in center comes out clean. It's my personal favorite!
