My g-g-grandfather was James Greenough born about 1817 in Prescot Lancashire. Father John (a weaver) mother Anna?. Hewas convicted on 2 counts of bURGLARY IN 1833 AND SENT TO nsw ON THE fAIRLEA. mARRIED mARGARET fITZGERALD IN mELBOURNE 1853. aNY INFO WOULD BE GREATLY APPRECIATED
2 cups self-rising flour
1 cup sweet milk
4 tsp sugar
5 Tbs. mayonnaise

Whip up all the ingredients together until nice and smooth. Spoon into greased muffin tins and bake at 400 degrees for about 10 minutes.

For a different variation, you can drop some berries or other fruit into the batter before you spoon them into the tins!
1 1/2 cups of corn meal
1 cup of sweetmilk
1/2 cups creamed-corn
1/4 cup of oil
1 tsp of baking powder
2 eggs
1 tsp salt
1/2 tsp ground hot pepper
1/2 cup grated cheese (white or yellow)

Mix ingredients; pour mixture onto a greased pan or muffin tins or skillet....bake for one hour at 350 degrees.

It shore is good!

4 eggs; 1/2 cup butter; 2 cups sugar; 1 cup of milk; 1 1/2 tsp. of vanilla; 1/2 tsp. of salt; 3 tsp. baking powder; 4 cups flour. 3 pounds dried apples.

Cream butter and sugar thoroughly. Add eggs and beat until smooth. Add milk, vanilla, salt, baking powder and flour slowly...when stiff, pinch off dough and roll on floured board until about 1/4 inch thick. Bake these little cakes (about 20) in ungreased skillett until brown. Cook apples until soft, sweeten, then mash. Place apples alternatley between layers of cakes, leave top portion without apples. You can make several little cakes, or, one big one. Store 2 or 3 days before eating.

1 cup butter; 1 cup of buttermilk; 1 tsp of cloves; 1 tsp of nutmeg; 1&1/2 tsp of cinnamon; 1 tsp soda; 1/2 tsp salt; with 3 cups flour; 1 & 1/2 cups jam (flavor of your choice, but we use blackberry) 3 eggs and 1 1/2 cups of sugar...

Cream shortening and sugar, add eggs and jam. Mix thoroughly. Sift the flour, add soda, salt and other spices. Add milk slowly to mixture, then beat well. Pour into greased tube cake pan and bake about 55 minutes at 350 dgrees. Frost with your choice of frosting.

Combine 1 cup of vanilla wafer crumbs, 1 cup powdered sugar, 1 cup finely chopped pecans and 2 1/2 tablespoons of cocoa.

Blend in 1 1/2 tablespoons white corn syrup, 1/4 cup of Bourbon whiskey.

Form into balls and roll in powdered sugar.

Pick, wsh and drain a batch of fresh, firm green beans. Remove ends and strings. Use a large darning needle with heavy white thread and thread through the pod near the middle of each bean, pushing them along the thread so they are about 1/4in. apart.

Hang the string of beans in a warm, well ventilated place to dry. They will shrivel. To cook, cover with water and soak overnight. Drain, renew the water and parboil slowly for about half an hour. Drain again. Cook with hamhocks or salt pork until tender. Serve with cornbread.

This is the same way the pioneers preserved and cooked greenbeans. Aunt Wea's neices and nephews remember her cooking them the same way from the time they were little, until the time they were 'big'!
