Ruby (Smith) Carlson was born in 1906 to Albert Smith and Clara Lindahl Hall. She married Gilbert Carlson, and they were married until Gilbert's death on November 6, 1994. She had children Ruby Joyce Carlson, Gerald Carlson, Marilyn Eibs, and Joanie Booth. Ruby Carlson died at age 93 years old in 1999, and was buried at Free Mission Cemetery in Polk County, Wisconsin USA.

In 1906, in the year that Ruby (Smith) Carlson was born, English biochemist Frederick Hopkins concluded that vitamins are essential to the human body and that a lack of vitamins caused scurvy and rickets. Scurvy and rickets were both huge problems in sailors that were at sea for extended time and the addition of vitamin C, vitamin D, and calcium in their diets helped eradicate the problem.
