Because having one's photo taken 100 or so years ago was considered a serious thing to do. So people attempted to look serious. I have a great-grandparent photo that is very serious, though my great-grandfather was quite a humorous, active fellow until his very last days

The primary reason people were so stoic in old photos is because of the cameras. The subject had to stay perfectly still for the camera to get a clear exposure. Cameras didn't have different exposure speeds like the ones we have now. So, no, life back then didn't suck.
